How do I go about restoring VMs? I know this is a basic question but when I click the three dots next to a VM, I would have expected a restore option?

Because there are more options to restore, it has its own section. Click on the "Restore" bar at the bottom of the screen and it will open that whole section with options to restore the whole VM or just some files from within it.
